I created rpms for CentOS and Fedora of openERP 5.0.7
I didn't test them yet but you can try them and send me your feedback to improve them.

2. A src.rpm or spec file would help
Thanks for creating those packages. It would help if you could include the spec file or src.rpm so people who are experienced with rpm packaging can look at the spec files and/or sources and come up with a patch if necessary.
